Tomato Fennel Soup

- 1/2 cup cherry, Tom Thumb, or grape tomatoes shopping list
- 8 green olives, pitted and slivered shopping list
- 4 garlic cloves, finely minced shopping list
- 1/4 cup finely chopped fresh basil (or 2 tbsp dried) shopping list
- 2 1/2 tbsp olive oil shopping list
- salt and pepper to taste preferences shopping list
- 2 tbsp crumbled feta cheese (optional) shopping list
- 1/2 cup onion, finely chopped shopping list
- 1/2 tsp fennel seeds shopping list
- 1 orange shopping list
- 2 500 ml tetripack cartons of tomato OR tomato with red pepper soup shopping list
- pinch cayenne pepper shopping list
- 4 diagonally sliced pieces of baguette, toasted shopping list
How to make it
- slice tomatoes into quarters and place in small bowl along with olives
- add 1 minced garlic clove, basil, and1 1/2 tbsp of the olive oil
- add salt and pepper to your taste preference
- gently stir in Feta if using
- set aside
- heat remaining oil over medium heat
- add onion and cook two minutes
- add remaining garlic, fennel seeds, and 2 wide strips of orange peel
- saute until onion is tender
- add the tetripacked soup
- add 1/4 cup of juice from the orange
- add the cayenne pepper
- simmer, covered --- for 10 minutes to blend all the flavors
- discard the orange peel
- Ladle into soup bowls
- add one baguette piece per bowl
- divide tomato mixture onto baguettes
- Enjoy!
