Chicken and rice with lemon

Ingredients
  • 2 Tbl. butter
  • 1 Tbl.oil
  • 4 chicken breasts (cut into strips)
  • 3 c. water
  • 2 packages Uncle Bens (Garlic and Butter flavor rice)
  • 1/3 c. lemon juice
  • pinch of rosemary
  • 1/2 c, cream
  • 1/4 c. chopped parsley
  • 1 c, spinach leaves
  • 1 tomato ( cut into pieces)

Directions
  1. In a skillet, melt butter and oil over medium heat and saute' chicken (until no pink remains)
  2. Add: water,rice,lemon juice,and rosemary
  3. bring to a boil
  4. reduce heat
  5. cover and simmer about 10 min.s
  6. remove from heat
  7. stir in chopped parsley and cream
  8. serve over spinach leaves as a bed
  9. garnish with tomato (for color)
