Lindas Meatloaf Wellington Recipe
One of the best meatloaves I make. Good enough for company...and just for a nice Sunday dinner. Easy, too.

Ingredients
  • 2 lbs. lean ground beef
  • 1/2 lb. fresh spinach, chopped
  • 1 c. mushrooms, diced
  • 1 med. onion, chopped
  • 1 1/2 c. fresh breadcrumbs
  • 1/2 c. dry oatmeal
  • Jane's Crazy Mix Up salt
  • freshly ground pepper, to taste
  • 1/2 c. half and half or evaporated milk
  • 1/2 c. tomato juice
  • 1/ c. good red wine
  • 1 tube Cruscent roll dough

Directions
  1. In large bowl, mix meat & veggies well. Make well in center and add breadcrumbs, half & half, tomato juice and wine. Let sit until breadcrumbs are well soaked. Add rest of the ingredients (except crescent roll dough) and mix well. Shape and bake in shallow roasting pan at 400 for 1 1/2 hours. Remove and pour off fat.
  2. Roll out dough, sealing seams together. Wrap dough around meatloaf, encasing it completely. Seal seams. Place back into roasting pan and bake until the browned and beautiful. You can brush the dough with a little egg wash to make it even prettier! Also is nice to make decorative slits in the top before baking.
