How to make it

  • Preheat oven to 350F
  • Grease a 9 inch round cake pan, line with waxed paper.
  • Beat together egg yolks and vanilla at medium speed until blended. Beat in half the sugar until thick and pale.
  • Using clean b,eaters, beat together egg whites and salt at medium speed until very soft peaks form. Beat in remaining sugar until stiff, but not dry, peaks form.
  • Fold yolk mixture into egg whites. Sift flour over mixture, fold in gently. Do not over mix. Pour batter into prepared cake pan.
  • Bake cake until top springs back when lightly pressed, 25 minutes. Loosen cake with metal spatula. invert cake onto wire rack and remove the pan, leaving the waxed paper, turn the cake right side up to cool completely.
  • Prepare filling. in a sauce pan, mix sugar and flour. Wisk in milk, egg yolks, vanilla and salt in that order. Over medium heat boil for one minute, whisking constantly. Stain through a fine sieve into a bowl and then press plastic wrap onto the surface and chill for 30 minutes.
  • using a serrated knife, cut horizontally through the cake, remove the waxed paper and place bottom layer on a serving plate. Spread with filling then add the layer of cake.
  • Prepare glaze in a sauce pan, bring sugar, corn syrup and water to a boil over low heat , stirring constantly until the sugar dissolved. Revove from heat, add the chocolate , let stand for a couple minutes then wisk until smooth. Pour glaze over cake, allowing to drip down the sides then let stand untill glaze sets.
