  • 10 pounds mixed apples (fuji, macintosh, gala, golden delicious)
  • 1 C water
  • 4 cinnamon sticks, or
  • 4 TBSP cinnamon, heaping (or less to taste)
  • 4 jiggers Goslings Dark Spiced Bermuda Rum
  • 1 tsp ground cloves
  • 1/2 C dark brown sugar (optional)

Directions
  1. Peel, core and chop apples
  2. place all apples in a large stockpot, with enough water to make it about 1 inch deep after the apples are added
  3. add cinnamon sticks or 3 Tbsp ground cinnamon, and 3 jiggers rum
  4. Cover pot and bring to a simmer - the apples will slowly steam/boil.
  5. Mash and stir the apples, don't be quick to add more water, but do add more if the apples are sticking.
  6. When the apples are mushier than you would want potatoes to be for mashed potatoes, remove from heat and mash well.
  7. Taste for flavor, if you want add 1 Tbsp brown sugar.
  8. transfer apple mix to crock pot, put on low heat, add remaining cinnamon and rum as well as cloves.
  9. Cook on low overnight, with the lid only partially on so that the water can evaporate or until it has reduced by half.
  10. Puree with a stick blender.
  11. Taste and add small amounts of brown sugar, cinnamon or cloves to your tastes.
  12. If it's still too runny, cook for a few more hours after blending.
  13. If you are going to can this makes about 5 or 6 pints, process in sterile jars in a hot water bath for 20 minutes, adjust for altitude according to your canner's instructions.

Wow, this looks really good. I spent a summer in upstate NY with a buddy that grew up on an apple farm elsewhere in NY. On our frequent jaunts back the MA (where I am from) we would stop on over to the farm stand and get some free grub for the ride including a couple gallons of cider, pies, fruit of all sorts, apple doughnuts... crap, I am getting hungry... anyway, I loved their apple butter and haven't had it in years. Will try it out, thanks.


I make this once a year, coming up in October, so if I find any quantity changes, will change then. I always do it by eye.


I have just the apples to make this. Thanks for the post. Can't wait to get 'er done.
