SUN-DRIED TOMATO PESTO WITH BOWTIE PASTA Recipe

How to make it

  • Cook pasta according to directions drain tomatoes reserve some of the oil cut tomatoes into thin strips
  • Cook Bacon in skillet untill crisp
  • Drain and Crumble
  • Drain Pasta and place in large bowl Add tomatoes and pesto mix well add Bacon and cheese toss well
  • For moiser consistency add some of reserved sun dried tomatoe oil Season with black pepper.
  • Found in newspaper

    momo, this was delicious. I had to make several adjustments though. I didn't have sun-dried tomatoes, so I peeled and seeded 2 tomatoes, put them in a bowl with some Italian seasoning and olive oil and let them sit while I did everything else. I also didn't have the basil pesto, but did have some basil pesto paste, so I used some of that. I also added a chopped zucchini that I softened up in the bacon fat. It was fantastic and I can't wait to check my blood sugar this morning, it should be GREAT! Thanks!
