The easiest way to do this salad is make a platter and arrange all of these veggies on it and let the quests scoop up what they want with chips.

Ingredients
  • 1 cup diced tomato
  • 1 cup diced red onion
  • 1 cup diced peeled jicama or carrot
  • 1 cup diced green bell pepper
  • 1 cup fresh corn kernels
  • 1 cup diced peeled avocado
  • 16oz black beans, drained and rinsed
  • 1 cup shredded monterey jack cheese
  • 1 cup baked tortilla chips, coarsely crushed
  • 8 cups mixed salad greens

Directions
  1. Place salad greens on plates.
  2. Arrange veggies on platter.
  3. Let everyone pick and choose each topping they want.
  4. Serve with Lime-Cilantro vinaigrette
