Ingredients
  • 2 cups black beans
  • 1 large coarsely chopped yellow onion
  • 2 cups chopped Italian plum tomatoes
  • 6 peeled garlic cloves
  • 3 bay leaves
  • 1/2 tsp whole thyme
  • 1 tsp. coarsely ground pepper
  • 4-6 cups stock or water
  • Ham bone or prosciutto bone
  • 1 white onion, chopped
  • A handful of coriander leaves
  • Peeled cooked shrimp for garnish(optional)
  • Sour cream or creme fraiche (optional)

Directions
  1. Rinse beans and pick out dirt, etc.
  2. Cover beans with water at least an inch over them.
  3. Bring to boil, then turn off.
  4. Leave beans for 2 hours.
  5. Place beans in a large stock pot.
  6. Add yellow onion, tomatoes, garlic, bay leaves and spices.
  7. Cover with 4-6 cups stock or water.
  8. Add ham or prosciutto bone.
  9. Simmer, uncovered 2 hours, stirring every 15 minutes.
  10. Garnish with chopped white onion and coriander leaves
  11. Add shrimp if desired.
  12. Add a spoon of sour cream or creme fraiche (optional)

This sounds like one I made a few years ago. It is a great recipe. I love this site and being able to find what we want to make and create great recipes and menus. My friends cook something different every weekend, and this weekend is CUBAN. We will be making this soup.
