Cuban Black Bean Soup

- 2 cups black beans shopping list
- 1 large coarsely chopped yellow onion shopping list
- 2 cups chopped Italian plum tomatoes shopping list
- 6 peeled garlic cloves shopping list
- 3 bay leaves shopping list
- 1/2 tsp whole thyme shopping list
- 1 tsp. coarsely ground pepper shopping list
- 4-6 cups stock or water shopping list
- ham bone or prosciutto bone shopping list
- 1 white onion, chopped shopping list
- A handful of coriander leaves shopping list
- Peeled cooked shrimp for garnish(optional) shopping list
- sour cream or creme fraiche (optional) shopping list
How to make it
- Rinse beans and pick out dirt, etc.
- Cover beans with water at least an inch over them.
- Bring to boil, then turn off.
- Leave beans for 2 hours.
- Place beans in a large stock pot.
- Add yellow onion, tomatoes, garlic, bay leaves and spices.
- Cover with 4-6 cups stock or water.
- Add ham or prosciutto bone.
- Simmer, uncovered 2 hours, stirring every 15 minutes.
- Garnish with chopped white onion and coriander leaves
- Add shrimp if desired.
- Add a spoon of sour cream or creme fraiche (optional)
