Ingredients
  • 1/2 cup beet juice
  • 1 tbsp garlic powder
  • 1 tbsp fresh parsley, minced
  • 2 tbsp lemon juice
  • 1 tbsp low-sodium soy sauce
  • 1 1/2 tbsp sugar-free maple syrup
  • 350g extra-firm low-fat tofu, sliced into 16 pieces

Directions
  1. Combine all ingredients but tofu in a bowl or measuring cup.
  2. Arrange tofu pieces in a shallow baking dish, and pour the marinade overtop.
  3. Marinate in fridge for two hours, flipping slices halfway through.
  4. Drain, reserving 1/4 cup marinade.
  5. Cook in a non-stick pan over medium heat for 3 minutes a side.
  6. Add reserved marinade and cook over high heat for 2 minutes longer.
