I Cant Believe I Created A Quail Recipe And Liked It Recipe

I was given 4 quail (cleaned thank goodness) by a friend. I searched the internet for a recipes and then decided to do this. I enjoyed it and hope you will too!

Ingredients
  • 1 half a firm sweet onion
  • 6 pieces of pepper or apple smoked baon
  • salt
  • pepper
  • flour
  • figs
  • triple sec
  • quail

Directions
  1. Debone quail by cutting off the leg and thigh and leaving whole
  2. cut off the breast meat
  3. on the onion half smear about 2 tblsp of good honey and let sit
  4. cut bacon in 1 inch pieces
  5. I use melissa's figs as they are very moist
  6. Crisscross the figs with an X and open( I forgot!)---
  7. you're ready

  9. heat saute pan on medium
  10. place sliced bacon in and check often stirring about to keep from charring
  11. ---------------
  12. when bacon is soft
  13. cut your onion in chunks and add
  14. --------------
  15. test your triple sec to make sure it has not spoiled
  16. --------------
  17. dredge the quail in flour seasoned with kosher salt and pepper
  18. add quail to pan
  19. keep triple sec close and ready
  20. add figs
  21. -------------
  22. saute, browning quail and onions and crisping bacon a bit
  23. ------------
  24. when it is browned to your satisfaction and the little crumbies are crackling in the pan
  25. deglaze the pan if there is any triple sec left with the ingedients still in the pan
  26. -------------------
  27. plate
  28. serve with fresh salad with garlic croutons
  29. ------------------
  30. That's it! Enjoy!

I have never had quail like this before I love fresh figs. I want to test this recipe for sure it sounds fantastic. I will have to tell the pescatarian in me to go on vacation.

Great recipe! I used to have quail as a girl. My brothers were hunters so we had lots of "game" meals. We usually fixed it like Momo spoke of... No triple sec allowed in my "momma's" house so no luck there but now....hmmmm...lol...

Perfect! The triple Sec adds a nice citrus flavor. I will be making this in the fall. (That is when a local friend said they will be ready) He raises them.

Dumb question but what does the honey have to do for the onion? is it only for ease of adding it to the skillet? i hope i can get quail because i want to try this. holly


Ha ha great recipe will have to try it. test the triplesec so it does"t spoil?..love it..now I have another cooking timer to go along with my beer-omator...
