I Cant Believe I Created A Quail Recipe And Liked It

- 1 half a firm sweet onion shopping list
- 6 pieces of pepper or apple smoked baon shopping list
- salt shopping list
- pepper shopping list
- flour shopping list
- figs shopping list
- triple sec shopping list
- quail shopping list
How to make it
- Debone quail by cutting off the leg and thigh and leaving whole
- cut off the breast meat
- on the onion half smear about 2 tblsp of good honey and let sit
- cut bacon in 1 inch pieces
- I use melissa's figs as they are very moist
- Crisscross the figs with an X and open( I forgot!)---
- you're ready
- ----------------------
- heat saute pan on medium
- place sliced bacon in and check often stirring about to keep from charring
- ---------------
- when bacon is soft
- cut your onion in chunks and add

- test your triple sec to make sure it has not spoiled
- --------------
- dredge the quail in flour seasoned with kosher salt and pepper
- add quail to pan
- keep triple sec close and ready
- add figs

- saute, browning quail and onions and crisping bacon a bit
- ------------
- when it is browned to your satisfaction and the little crumbies are crackling in the pan
- deglaze the pan if there is any triple sec left with the ingedients still in the pan

- plate
- serve with fresh salad with garlic croutons

I have never had quail like this before I love fresh figs. I want to test this recipe for sure it sounds fantastic. I will have to tell the pescatarian in me to go on vacation.
