Ingredients

How to make it

  • Clean giblets out of bird (do whatever you want with them, or throw out)
  • Fill large bowl (big enough to fit bird in with some room) with water
  • Add seasonings. I used tonight: Weber's Smokey Mesquite seasoning, red pepper flakes
  • Immerse bird in water breast side down with seasonings, I like to add some fresh rosemary, or other herbs
  • Brine in refrigerator for at least 2 hours up to 8 or overnight if you like
  • Remove from brine, place bird on roaster (see photo) or if you can improvise with a beer can filled with brine placed in a heat proof pan
  • You can put fresh rosemary or other herb in neck of bird
  • Preheat grill to 350
  • Place roaster on indirect heat on grill
  • Close lid and keep temp at or around 350 for approximately 1 hr, 20 minutes.
  • Start checking for doneness after 1 hour. bbqs vary
  • Done when poked at thigh and juices run clear.
  • Be careful to not overcook. Should never take over 1 1/2 hours.
  • Enjoy!

    OK..here goes with silly questions..but I don't know as I have never done this but it looks and sounds so good and not very hard. Do you slather the baby up with the olive oil before you put it on the grill?? I have a propane grill, will this use up a lot of the propane??? Thanks Justjakesmom.

    Are the seasonings added to the brine or on/in the bird? Thank you for these directions. I don't have a "roaster" for the grill...would an open can of beer do? I'm keeping this recipe. Thanks for sharing.
