- 2 very ripe medium bananas shopping list
- 3 large eggs, separated shopping list
- 1 teaspoon (5ml) vanilla flavouring shopping list
- 3oz (90g) flour shopping list
- pinch salt shopping list
- 2 tablespoon (30ml) sugar shopping list
How to make it
- Preheat oven 190c, Gas ,mark 5
- Line a baking tray with none-stick paper
- Slice bananas into bowl of food processor of blender
- Add egg yolks and vanilla, puree until smooth
- Mix flour and salt together
- In a separate bowl whisk the egg whites with the sugar until stiff
- Gently fold in the banana mixture to the egg whites, then gradually fold in the flour
- Spoon mixture into a piping bag that has been fitted with a plain nozzle
- Pipe 4-inch (10-cm) fingers of the mixture on to the baking tray, leaving a space between them of about 2 inches
- Bake for about 12 minutes or until lightly browed
- transfer to a wire rack and allow to cool slightly
- serve warm for best but can be eaten cold
