Pumpkin Squares

- Crust ~ shopping list
- 1 c. flour shopping list
- 1/2 c. quick cooking oats shopping list
- 1/2 c. packed brown sugar shopping list
- 1/2 c. softened unsalted butter shopping list
- Filling ~ shopping list
- 1 15 oz. can 100% pure pumpkin shopping list
- 1 12 oz. can evaporated milk shopping list
- 1/2 c. sugar shopping list
- 2 lg. eggs (or substitute) shopping list
- 1 t. ground cinnamon shopping list
- 1/2 t. salt shopping list
- 1/2 t. ground ginger shopping list
- 1/4 t. ground cloves shopping list
- Topping ~ shopping list
- 1/4 c. packed brown sugar shopping list
- 1/2 c. chopped pecans or walnuts shopping list
How to make it
- Preheat oven to 350.
- For Crust ~
- Beat flour, oats, brown sugar & butter in small mixer until crumbly.
- Press on to bottom of ungreased 13 x 9" baking pan.
- Bake for 15 minutes.
- For Filling ~
- Beat pumpkin, milk, sugar, eggs, spices, salt in large bowl until smooth.
- Pour over crust and bake for additional 20 minutes.
- For Topping ~
- Combine brown sugar & nuts in small bowl & sprinkle over filling.
- Bake for additional 15 to 25 minutes or til knife inserted in center comes out clean.
- Cool completely in pan on wire rack.
- Refrigerate until ready to serve.
- Top with whipped cream, if desired.
