How to make it

  • Prepare the Chicken Fried Steak batter: Mix the first 4 ingredients with 1/2 the milk and stir until smooth. Add remainder of milk and mix well
  • Have the butcher tenderize the meat for you or thoroughly pound both sides with a tenderizing mallet
  • Trim off fat and cut 2 pieces into 5-6 inches in diameter
  • Flour each piece thoroughly and shake off excess
  • Dip meat in the Chicken Fried Steak batter, drain
  • flour again
  • fill a large pan half way with a good vegetable oil 325 degrees
  • Cook meat 7-10 mintues until golden brown
  • To Prepare the gravy:
  • Use the pan used for cooking the meat
  • gradually add flour and the butter. Slowly add milk, stirring until desired thickness is achived. Remove from heat
  • salt and pepper to taste

    Recipe is good and all that stuff but the gravy could be cut back to half a batch. Half stick butter, half cup flour, and four cups milk.
