Chipotle Cornbread Bites

- 1 cup all-purpose flour shopping list
- ½ cup cornmeal shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- ¼ tsp salt shopping list
- 1 cup milk shopping list
- 1 egg shopping list
- 2 tbsp butter, melted shopping list
- 1 small chipotle chili in adobo, minced shopping list
- 1 tsp adobo sauce shopping list
- ½ cup shredded old cheddar cheese shopping list
- Half small sweet red pepper, finely diced shopping list
- 1/3 cup finely diced smoked chorizo sausage (optional) shopping list
- 1 green onion, minced shopping list
- salsa sour cream dip shopping list
- Chopped fresh coriander shopping list
How to make it
- Preheat oven to 400ºF
- Grease a 24 mini-muffin tin; set aside.
- Whisk together flour, cornmeal, baking powder and soda and salt.
- In another bowl, whisk together milk, egg, butter, chipotle pepper and adobo sauce.
- Pour over flour mixture and stir until just combined.
- Add cheese, red pepper, chorizo sausage, if using, and green onion.
- Stir until distributed evenly.
- Spoon batter among prepared mini muffin tins and bake for about 15 minutes or until firm to the touch.
- Let cool in pan on cooling rack.
- Remove to cooling rack to cool completely.
- Dollop each cornbread bite with salsa sour cream dip and sprinkle with fresh coriander.
