Extra-Crispy Pork Milanese Recipe
Lemon,olive oil and seasoned breadcrumbs create a tasty,crunchy crust for tender pork chops.

  • 1 lemon
  • 1/3c Italian-seasoned dry breadcrumbs
  • 5Tbs olive oil
  • 1/8tsp salt
  • 1/8 tsp pepper
  • 4 boneless center-cut pork chops,3/4" thick,about 11/2lbs.
  • 6c mixed baby greens,3oz.
  • 1c cherry tomatoes,halved
  • lemon wedges

Directions
  1. Grate 1tsp. zest from lemon. In a small bowl,mix zest and breadcrumbs;reserve. Squeeze 1Tbs juice from lemon. In small bowl,whisk together juice,3 Tbd oil,salt and pepper;reserve.
  2. Place chops between sheets of plastic wrap. Using flat meat mallet or heavy skillet,pound each to 1/4" thick. Moisten chops with water,coat with breadcrumbs.
  3. In a large skillet,heat remaining 2Tbs oil over med-high heat. Add pork and cook,in batches if necessary,turning once,until no longer pink in center,4-5 mins per side. Drain on paper towels. Toss greens and tomatoes in reserved dressing. Serve over pork.If desired,serve with lemon wedges.
