How to make it

  • Grate 1tsp. zest from lemon. In a small bowl,mix zest and breadcrumbs;reserve. Squeeze 1Tbs juice from lemon. In small bowl,whisk together juice,3 Tbd oil,salt and pepper;reserve.
  • Place chops between sheets of plastic wrap. Using flat meat mallet or heavy skillet,pound each to 1/4" thick. Moisten chops with water,coat with breadcrumbs.
  • In a large skillet,heat remaining 2Tbs oil over med-high heat. Add pork and cook,in batches if necessary,turning once,until no longer pink in center,4-5 mins per side. Drain on paper towels. Toss greens and tomatoes in reserved dressing. Serve over pork.If desired,serve with lemon wedges.
