Ingredients
  • 1 large onion
  • 2 ripe tomatoes (or canned tomatoes)
  • 4 tbsp olive oil (or ordinary oil if not available)
  • 2 cloves garlic
  • small glass dry white wine
  • Chopped parsley to taste
  • 1 1/2 cups starchy rice (carolino, carnarolli...)
  • 1 kilo shellfish mixture (prawns, mussels, clams, crab, whatever)
  • 5 cups water
  • Chili to taste
  • Salt
  • 3 tbsp thick cream

Directions
  1. Finely chop the onion and garlic.
  2. Lightly fry with the oil until transparent.
  3. Add the tomatoes, chopped.
  4. Add the wine and let reduce slightly.
  5. Add the rice and water.
  6. Let it cook for about 10 minutes.
  7. Add the shellfish and cook for a further 10 minutes.
  8. Season with chili and salt to taste.
  9. Add the cream.
  10. Sprinkle with the parsley and serve.
