Steak Sandwich and Roasted Sweet Potato Mash

- 1/2 lb of top sirloin or flank steak shopping list
- 3 tsp oil. shopping list
- 1 red pepper shopping list
- 1 small onion shopping list
- 1 cup chopped mushrooms. shopping list
- 2 Crusty kaiser rolls shopping list
- 4 slices of smoked Gouda shopping list
- 1 shallot shopping list
- 1/4 cup of chicken or beef broth, or red wine shopping list
- 3 tbsps of Miracle Whip shopping list
- 1 tsp of lemon juice shopping list
- 1 tbsp of fresh chopped oregano shopping list
- 3/4 lb of sweet potato - washed and peeled. Cut into slices. shopping list
- 1/4 tsp of cayenne shopping list
- salt and pepper shopping list
How to make it
- Soak the Sweet Potatoes in Hot water for 10 minutes.
- Preheat the over to 450.
- Drain and Dry Sweet Potatoes thoroughly.
- Toss with 1 tbsp of Olive oil and the cayenne.
- Coat the bottom of a cookie sheet with olive oil and sprinkle it with Salt and Pepper.
- Place Sweet Potatoes on the cookie sheet in single layer.
- Cover the Cookie sheet with tightly with foil and bake for 15 minutes.
- Remove the foil and rotate the pan. Bake for another 25-30 minutes or until the potatoes have begun to brown.
- Meanwhile, heat a 10 inch saute pan over medium heat and add 1 tsp of oil. Cook the steak on each side for about 4-5 minutes.
- Remove from pan and allow the steak rest, tented with foil.
- To the steak pan, add the remaining oil and the shallot - stirring constantly for 30 seconds.
- Deglaze the pan with the broth or wine and boil until the liquid has thickened and reduced by half.
- Add the Onions and Peppers and saute for 3 minutes.
- Add the mushrooms and saute until they have released all their moisture and the pan juices have evaporated, about 3-4 minutes more.
- While the mushrooms are cooking - place the kaiser rolls, brushed with olive oil, in the oven to toast.
- Mix the Miracle Whip, lemon juice and oregano together in a small dish. Add Salt and Pepper to taste.
- Remove the rolls and sweet potatoes from the oven.
- Thinly slice the steak. Divide among the two rolls.
- Top with the onion and pepper mixture.
- Add two slices of Gouda and return to over for 4 more minutes to toast the cheese.
- While the sandwiches toast, move potatoes to bowl and mash with some oil and Salt and Pepper until chunky, but smooth in consistency.
- Remove the sandwiches from the oven - spread the top wth Sauce, and serve hot.
