Veggie Mac and Cheese

- 1-1/2 cups uncooked elbow macaroni shopping list
- 3 cups fresh broccoli florets shopping list
- 2 cups fresh cauliflowerets shopping list
- 3 large carrots, halved and thinly sliced shopping list
- 3 celery ribs, sliced shopping list
- 1 medium onion, chopped shopping list
- 1 Tbsp. butter shopping list
- 1/4 cup all-purpose flour shopping list
- 1 cup milk shopping list
- 1 cup chicken broth shopping list
- 3 cups (12-oz.) shredded sharp cheddar cheese shopping list
- 1 Tbsp. stone ground mustard shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. ground black pepper shopping list
- 1/4 tsp. paprika shopping list
How to make it
- Cook macaroni as pkg. directions.
- Adding the broccoli florets, cauliflowerets, carrots and celery during the last 6 minutes of cooking, drain.
- Transfer to a 13x9x2" greased baking dish.
- meanwhile, in a Dutch oven sauté the onion in butter until tender.
- Sprinkle with flour, stir until blended.
- Gradually stir in the milk and chicken broth.
- Bring to a boil cook and stir 2 minutes or until thickened.
- Stir in the cheese, mustard, salt and pepper.
- Pour over macaroni mixture, stir to coat.
- Sprinkle with paprika.
- Bake uncovered until heated through.
- Yield 12 servings
