Juicy pea-flavored pea sprouts are a symbol of spring. If none are available, you can always replace them with soft lettuce leaves such as Boston or Bibb. Quick and easy, this is a DELICIOUS blend of flavors, guaranteed to satisfy!

Ingredients
  • 1 pkg crab meat, defrosted, or 1 can crab meat
  • 1 1/4 cups cooked peas
  • 6 cups fresh pea sprouts
  • ==============================
  • Dressing
  • Zest of 1 orange
  • 2 tbsp freshly squeezed orange juice
  • 6 tbsp olive oil
  • Salt and freshly ground pepper

Directions
  1. Squeeze the crab meat well to remove excess water and break into small pieces, making sure there are no shell fragments.
  2. Place in a large bowl with peas and pea sprouts.
  3. Mix ingredients for dressing with a small whisk until blended.
  4. Pour over crab mixture and toss.
  5. Divide among salad plates and serve immediately.

I have never seen pea sprouts at the store. I like other sprouts. Do I have to grow(germinate) my own?
