Moussaka From Dorna Bucovina

- 1 large onion diced small shopping list
- 2 carrots diced small shopping list
- 200 g butter ( yeah, baby!) shopping list
- 1 cup oil ( I use sunflower) shopping list
- 1 kilo ground veal shopping list
- 1/3 cup Tzuica - which is a type of Shlibovitz or you can use plum Brandy shopping list
- 1 glass white dry wine (Pinot Grigio or Pinot Gris preferably) shopping list
- salt, pepper shopping list
- dill - 4 tbsp diced shopping list
- thyme - 2 tbsp diced shopping list
- 1.5 kg potatoes peeled and cut in thin slices shopping list
- 1 cup sour cream (I have told you that this is different! ) shopping list
- 2 eggs shopping list
- 250 g cheese ( we use Cashcaval - similar to Italian Cacciocavallo - in case you cannot find it use semidry cheese - like a Gouda or Edam) shredded shopping list
- Sauce: shopping list
- 1 cup sourcream shopping list
- 1 cup tomato juice shopping list
- 1 spoon honey shopping list
- pepper, salt shopping list
- 1 tbsp thyme shopping list
- 1 glass of same wine you used above shopping list
How to make it
- Heat 1/2 cup oil and 100 g butter and fry gently the onion and carrots until translucent. Add the veal until it change colour ( do not leave it too long, it will dry!). Add the Plum Brandy, the wine and in order: salt, pepper, dill and thyme.Set it on the side.
- In the other 1/2 cup of oil, fry the potaoes (one batch at a time - as you do not want to break them) dry them.
- Beat the eggs with sour cream, cheese, salt and pepper
- Use a large ovenproof pot and butter it generously. Add one layer of potatoes, one layer meat mix and one layer sourcream mix and repeat as needed. The last layer has to be the soucream mix!
- Bake it at 350F for 45min - 1 hour.
- Separately boil the tomato juice with wine, honey, thyme, salt and pepper. Reduce it to 1/2 and turn the heat to low. Add the sour cream and mix. Take it off the stove and serve it warm on the Dorna Moussaka.
- Serve it with the same dry wine!
- ** You can use ground chicken as well, instead of veal**

This sounds incredible. If I had to replace the veal with an other meat, what do you suggest I use? Can I substitute the veal with something else? This sounds heavenly and I really want to make this!
