Dazzling Christmas Bread

- 1/2 C butter, softened shopping list
- 1 C white sugar shopping list
- 2 eggs shopping list
- 1 1/2 C all-purpose flour shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 tsp ground cinnamon shopping list
- 1/2 tsp ground nutmeg shopping list
- 1/4 tsp ground ginger shopping list
- 3/4 C pumpkin puree shopping list
- 6 ounces semi-sweet chocolate chips shopping list
- 1 C chopped pecans, divided shopping list
- 1/4 C confectioners' sugar shopping list
- 2 TBSP heavy cream shopping list
- 1/4 tsp ground nutmeg shopping list
- 1/4 tsp ground cinnamon shopping list
How to make it
- Preheat oven to 350 degrees.
- Place butter and sugar in a large bowl.
- Cream together until light and fluffy.
- Add one egg at a time, mixing well between additions.
- In a smaller bowl fold together flour, baking soda, salt, 1 tsp of cinnamon, 1/2 tsp nutmeg and ginger.
- Stir in half of the flour mixture into the sugar mixture slowly.
- Add 1/2 of the pumpkin puree to mixture and stir.
- Slowly add remaining flour mixture.
- Stir in rest of the pumpkin puree.
- Add 3/4 C of pecans and stir gently.
- Using a rubber spatula fold in chocolate chips.
- Grease and lightly flour a loaf pan.
- Place bread mixture into loaf pan.
- Sprinkle with remaining pecan pieces.
- Bake 1 hour or until knife comes out clean.
- To make the icing place confectioners' sugar into a mixing bowl.
- Stir in heavy cream.
- Add cinnamon and nutmeg.
- Continue to stir until smooth.
- Place icing on bread once bread has cooled.
