  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 2 cloves chopped garlic
  • 4 lbs. mussels
  • 1/3 (3 ounces) smoked salmon
  • 2 tablespoons fresh Italian parsley, minced
  • Lemon wedges

Directions
  1. Ppour the cream and wine into a saucepan and add the garlic. Simmer over medium-high heat for 1 minute. Add the mussels and crumble in the smoked salmon. Cook over medium heat, stirring occasionally, uncovered, for 5 to 6 minutes, or until the mussels open. Discard any mussels that don't open. Do not allow liquid to boil, as the cream may curdle. Sprinkle with parsley and garnish with lemon wedges.
