Orange Chicken And Veggies

- (Need to marinate for 8 hrs. or overnight) shopping list
- 1-6oz. can thawed frozen orange juice concentrate shopping list
- 3/4 c. maple syrup shopping list
- 4 tsp. canola oil shopping list
- 3/4 tsp. curry powder shopping list
- 1/4 tsp. cayenne pepper shopping list

- 6 boneless skinless chicken breast halves (!-!/2 lb.) shopping list

- 2 med. sweet red peppers, halved and seeded shopping list
- 1 med. green pepper shopping list
- 3 med. zucchini, halved lengthwise shopping list
- 1 fresh pineapple, peeled and cut into 1/2-inch slices shopping list
- 2 unpeeled med. oranges, cut into 1/2-inch slices shopping list

- Note: Peel the oranges if you don't care for that strong orange peel taste. I prefer only leaving 1/4 or less of the peels. shopping list

- Also, you can use a can of pineapple slices if you can't get fresh pineapple. shopping list
How to make it
- In a bowl, combine first five ingredients to make the marinade.

- Place chicken in a gal. size plastic resealable bag, add half the marinade
- _____________________
- Place peppers, zucchini, pineapple, and oranges in another gal. size resealable bag; add remaining marinade
- _____________________
- Marinate overnight (or 8 hours)
- _____________________
- Drain chicken, discarding marinade.
- Drain veg. and fruit, reserving marinade for basting.
- _____________________
- Grill the chicken, veg., and fruit uncovered over med. heat for 3 mins. on each side.
- Baste with reserved marinade.
- Continue turning and basting for 6-8 mins. longer or until chicken juices run clear, veg. are tender and fruits golden brown.

Deeeeelicious, but it is raining here all the time now so the BBQ is out, but the oven grill is still working!
