Red Hot Marinated Chicken Skewers With Yogurt Cilantro Sauce Recipe
RED HOT MARINATED CHICKEN SKEWERS WITH YOGURT CILANTRO SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sims Estate in Arlington, Texas in 1991.

  • 2 teaspoons spicy chili powder
  • 1 teaspoon cascabel powder
  • 1 teaspoon cayenne pepper
  • 2 tablespoons ancho chili powder
  • 1 tablespoon ground cumin seeds
  • 1 tablespoon honey
  • 1/2 cup olive oil
  • 2 cups orange juice
  • 8 chicken thighs skinless and boneless cut in half lengthwise
  • 32 wooden skewers soaked in water for 2 hours
  • 1 teaspoon salt
  • 16 flour tortillas
  • Yogurt Cilantro Sauce:
  • 1 cup plain yogurt drained in colander for 1 hour
  • 2 tablespoons finely chopped cilantro
  • 2 clove garlic finely minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Combine chili powders, pepper, cumin, honey, olive oil and orange juice to make the marinade.
  2. Rub marinade into chicken thighs then cover and refrigerate 6 hours or overnight.
  3. Prepare a charcoal or wood fire and let it burn down to embers.
  4. Thread each half chicken thigh onto 2 parallel skewers to keep the meat flat on the grill.
  5. Season with salt and grill 4 minutes on each side then grill each tortilla 1 minute per side.
  6. Serve skewers on a platter with the yogurt sauce and folded trilled tortillas.
  7. For sauce combine all ingredients in a medium bowl the allow to rest 30 minutes before serving.
