Grilled Pork Tenderloin with an Orange Chipotle Tomato Sauce

- The Meat: shopping list
- 2 pork tenderloins, one vacuum package, sliced on a diagonal into 2” pieces shopping list
- ¼ cup sliced shallots shopping list
- ½ cup white wine shopping list
- 1/2 tsp. salt shopping list
- ¼ tsp black pepper shopping list
- The Sauce: shopping list
- 1 Tbsp olive oil shopping list
- ½ small onion chopped shopping list
- 1 can 8 oz. diced tomatoes, drained shopping list
- 2 Tbsp pureed chipotle peppers canned in adobe sauce or to taste shopping list
- ½ a large orange, peeled, seeded and membranes removed and sectioned shopping list
How to make it
- For the Meat:
- Place all the ingredients for the meat in a Ziploc bag and marinate for 1-6 hours. I usually turn the bag half through my marinating time.
- Grill the pork for appx 3 minutes on each side or until desired doneness.
- For the Sauce:
- Sauté onions in olive oil on medium heat until translucent, about 4 to 6 minutes. Add tomatoes, chipotle and orange sections. Simmer for 8 minutes. Let cool slightly. Blend in a blender, food processor or with a wand mixer. Return to pan and simmer for appx 10 minutes or until thickened ( I sometimes need to do more or less time when simmering, depending on the water content of the oranges.)
