Hominy-Jalapeno Bake Recipe
This makes a creamy yet spicy side dish. Goes great with BBQ or baked ham. We like to double the recipe, leftovers are good! Great comfort food...

Ingredients
  • 2 cans hominy, drained, one yellow and one white
  • 1 can cream of chicken soup
  • 3/4 cup sour cream
  • onion, chopped
  • jalapenos, from jar, diced
  • cheese shredded, a little mixed in

Directions
  1. Mix together.
  2. Bake 350 degrees for 25-30 minutes or until hot.

Sorry, I'm a northern girl and have no idea what hominy is. Is it like grits or cornmeal? Does this come out firm like a cornmeal cake.? I breathlessly await your reply.:O)

Found out what hominy is, but I still want to know if it comes out firm or mushy. TY!


It is sort of a creamy dish, hominy is not hard or dry. It is corn, I know that much. I guess I would use this dish like I would the hash brown casserole. A great tasting side dish, my grandsons love to eat the leftovers on crackers like it was a dip! No matter how much I make at a time they say it isn't enough. They are almost 12 and 13 years old now, boy, the years do fly! Let me know if you try it and like it...
