this is what Soul Dog says about these cookies:
"These are some of the best chocolate chip cookies we’ve ever had. No one will know (or care)
they’re gluten-free."
I will have to add walnuts to mine.

A recipe is not healthy just because it is gluten free. This recipe contains too much fat, even if it is canola oil. I find that I can cut the fat in half on most dessert type recipes and they still work and taste fine. This one doesn't need to be cut back that much, but should be tried with about 2/3 to 3/4 cup of canola oil. But, a half a cup might even work. My chickpea choc chip recipe uses 1/2 cup of butter for 2 c flour and the same amount of sugar. Cookies, which I only make once a month or less, are about the only recipe for which I use butter.
