Ingredients
  • 1 Orange
  • 1 Lemon
  • 1 1/2 c Water
  • 1/4 c Fresh orange juice
  • 4 c Fresh blueberries, rinsed and destemmed
  • 3 c Granulated sugar
  • 1/8 ts Ground cinnamon
  • 1 dash Of freshly grated nutmeg

Directions
  1. Wash 5 half pint jars. Keep hot until needed. Preaper lids as manufacturer directs.
  2. Cut a thin slice from each end of the orange and lemon.
  3. Discard slices. Score orange and lemon through the peel in 4 places.
  4. Carefully remove all the peel and set pulp aside.
  5. Lay peel flat and cut away half the white pith
  6. . Cut peel into very fine shreds.
  7. Place in a skillet with water.
  8. Bring to a boil, cover and cook on high heat 10 minutes.
  9. Meanwhile, separate lemon adn orange pulp from membranes.
  10. Add pulp to cooking peel. Squeeze membranes to extract any juice;
  11. add to skillet along with 1/4 cup of orange juice.
  12. Cover and cook over medium heat for 15 minutes longer.
  13. Add blueberries, sugar,cinnamon and nutmeg.
  14. Bring mixture to a boil and continue cooking,uncovered, for 20 minutes.
  15. The blueberries will pop open and the mixture will begin to thicken slightly and appear glossy.
  16. Turn off the heat and transfer a small amount of marmalade to a saucer.
  17. Place in freezer for 5 minutes. If the mixture wrinkles as a whole (not just a skin on top) when pushed to one side with a finger, it is ready.
  18. This marmalade thickens a great deal as it cools, so avoid overcooking.
  19. Ladle the hot marmalade into 1 hot jar at a time, leaving 1/4 inch head space.
  20. Wipe jar rim with a clean, damp cloth. Attach lid. Fill and close remaining jars.
  21. Process in a boiling water canner for 10 minutes. (15 minutes at 1,001 to 6,000 feet, 20 minutes above 6,000 feet)
  22. Makes about 5 half pints.

I just planted 3 blueberry bushes this year.... Will have to bookmark this recipe for maybe next year I will get a bumber crop of blueberries..LOL.

I just ordered a blueberry bush to plant in a very large pot. I too will have to wait and see if I get some next year. In the meantime, I'll just have to go buy some to make this lovely recipe!
