How to make it

  • Blend the eggs and fat together in a small bowl.
  • Add the matzoh meal, salt, and baking powder and blend well.
  • Add the club soda to incorporate completely.
  • Cover and refrigerate the mixture at least one hour.
  • Bring a large pot of lightly salted water to a boil.
  • Using wet hands (to avoid too much stickiness) form the mixture into balls. I like large matzoh balls and used about 2 Tbsp. each.
  • Carefully drop the balls into the boiling water and then cover the pot.
  • Turn down the heat to a slow boil and cook until the matzoh balls are soft and as the saying went... "pughy"
  • Remove the matzoh balls with a slotted spoon and when the soup's ready serve in the soup.

    I kept forgetting to get back to you on these.. I made my forst matzoh balls that were good! Now when I make my stock.. I save the chicken fat and keep it in freezer. come to find out, that is what my friends grand ma used to fry her potatoes with..

    CHICKEN FAT: If you live in the NY area they generally sell it in containers in the refrigerator case around other Kosher items. Here in Ca. I trim the fat when I prepare chicken and freeze it until I need it. I have also been known to ask butcher dept. people in grocery stores out here if they have any around. I hope that helps.

    Yey! I remembered to buy Matzoh Meal today...it's "unsalted". I'm half-way there! Now how do I get chicken fat....do I have to roast a chicken or do I ask the butcher or does it come packaged? Sorry to sound so ignorant!

    I make chicken soup several times a year and will definitely try this the next time I make it! The Katella Deli in Cerritos (I think it's Cerritos) makes a great Matzoh ball soup. Thanks!
