  • For shortbread crust:
  • 1 stick butter, softened
  • 1/3 cup packed dark brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 cup all-purpose flour
  • For chocolate dulce de leche:
  • 1 cup heavy cream
  • 1 cup dulce de leche
  • 4 large egg yolks
  • 5 ounces 60% cacao bittersweet chocolate, finely chopped

Directions
  1. prep time does not include chilling of bars
  2. Make shortbread crust by preheating oven to 375F degrees.
  3. Butter shallow 9x9.5 inch square baking pan.
  4. Line bottom and 2 sides with
  5. parchment paper, leaving overhang.
  6. Butter parchment.
  7. Blend together butter, brown sugar, vanilla and salt in bowl with
  8. fork.
  9. Sift in flour and blend with fork until soft dough forms.
  10. Spread dough evenly in baking pan using spatula, then prick all over
  11. with fork.
  12. Bake until golden, 15 to 20 minutes, then cool completely in pan
  13. (about 30 minutes).
  14. To make chocolate dulce de leche, bring cream and dulce de leche to a simmer in small heavy saucepan, stirring with wooden spoon until dissolved.
  15. Whisk together yolks in bowl, then slowly whisk in hot cream mixture.
  16. Return to pan and cook over medium heart, stirring constantly, until
  17. thermometer registers 170F degrees.
  18. Remove from heat and whisk in chocolate until melted.
  19. Pour chocolate mixture over cooled shortbread and chill, uncovered,
  20. until set (about 2 hours).
  21. Run a small knife around edges to loosen,then transfer to cutting board.
  22. Cut with hot clean knife into bars.
  23. Chill until ready to serve.

I actually made these a couple days ago. And man are they good! My husband says they are too sweet for him, so darn I've got to eat them all. Instad of measuring out a cup of Dulce de Leche, I just used the whole can. I think it was about 13 oz, and it turned out awesome!! Thanks for the recipe. I'll post a pic of the one I have left! :)
