Peanut Butter Raspberry Pinwheels

- 1 Crisco butter flavor stick or 1 cup butter flavored shortening shopping list
- 1 cup creamy peanut butter shopping list
- 3/4 cup sugar shopping list
- 3/4 cup firmly packed brown sugar shopping list
- 2 eggs shopping list
- 1 tspn vanilla shopping list
- 2 1/2 cups all-purpose flour shopping list
- 1 tsp salt shopping list
- 1 tsp baking soda shopping list
- 1/2 cup seedless red raspberry jam shopping list
- 2/3 cup very finely chopped peanuts shopping list
How to make it
- Combine shoetening,peanut butter,sugar & brown sugar in a large mixer bowl
- Beat at medium speed of electric mixer until well blended.
- Beat in eggs & vanilla
- Combine flour & baking soda & add gradually to creamed mixture at low speed
- Beat until well blended
- Cut parchment paper to line 17x11 inch baking pan
- Press dough out to edges of paper & spread with raspberry jam to within 1/2 inch of edges
- Lift up long side of paper. Loosen dough with spatula & roll dough up jelly roll fashion. Seal the seam
- Sprinkle paper with nuts & roll dough over nuts
- Press on any extra nuts
- Wrap in plastic wrap & place in plastic bag
- Refrigerate over night
- Pre-heat oven to 375 degrees
- Grease cookie sheet
- Unwrap dough & cut into 1/2 inch slices
- Place slices 2 inches apart on cookie sheet
- Bake 10 - 12 mins or until set
- Cool for about 5 minutes on baking sheet & then remove to wire racks to cool completely
