Ingredients

How to make it

  • Slice artichokes set aside in lemon water.
  • Bring a large pot of water to a boil.
  • Heat oil in a large skillet over medium heat. Saute garlic until it turns light yellow.
  • Drain artichokes in colander.
  • Add anchovy and artichokes to skillet. Cook for about 5-10 minutes. ADD ricotta cheese; cook for 3 additional minutes. Seaason with salt and pepper to taste. Set aside.
  • Add pasta to boiling water; cook according to package directions.
  • Heat sauce through while pasta is cooking.
  • Drain pasta reserving 1/2 cup of pasta cooking water; immediately add to sauce. Stir in reserved pasta water; mix well.
  • Sprinkly with chopped parsley.
  • Put on serving platter or bowl and serve.
  • I have also put halved cherry tomatoes in the sauce... yummy
  • ENJOY!

    This sounds so good. I'm sure the one anchovy does add some flavor and I would dare anyone who hates them to be able to tell that it's in there.

    I've seen so many artichoke recipes over the last few weeks, and would love to use them. Only I cant get artichokes in jars, tins or fresh!
