This yummy with cream cheese on a toasted bagel, on warm toast, on crackers or just eaten out of the jar! I just thought...heated with some soy sauce, minced ginger, and sesame oil, this would be a great topping for baked chicken...

Ingredients
  • 4 cups crushed pineapple, not drained
  • 7 oz. shredded coconut
  • 1 cup dark rum
  • 6 1/2 cups sugar
  • 2 Tbsp. lemon juice
  • 1 pkg. liquid pectin

Directions
  1. Combine all ingredients except pectin in a large pat and bring to a boil over a medium high heat.
  2. Reduce heat and simmer 30 - 40 minutes to thicken.
  3. Remove from heat and stir in pectin, mixing well.
  4. Ladle into 8/9 - 8 oz. jars and process in a boiling water bath for 10 minutes.
  5. Cool overnight.
  6. Eat.
