Mushroom and Spinach Casserole

- 3 (small boxes) frozen spinach or 2 bags of fresh shopping list
- 2 large pkgs of sliced mushrooms or 3 cans drained well shopping list
- 1 large onion chopped shopping list
- 2 cloves garlic chopped shopping list
- 1 (16 oz) shredded cheddar cheese shopping list
- parmesan cheese shopping list
How to make it
- Cook spinach according to box
- Fresh spinach: Cook in olive oil & garlic till tender
- In large frying pan, saute onion, garlic and mushrooms in a mixture of olive oil (2 tbsp) and butter (2 tbsp) till cooked
- In a buttered casserole pan
- Layer half the spinach mixture, then half the mushroom mixture
- Top with 1/2 bag of shredded cheese and Sprinkle with Parmesan cheese
- Layer the balance in same way
- Top with salt, pepper & garlic powder
- Bake 20 minutes in 350 oven till cheese is melted and hot
