I've done this with orange peel but I bring the orange strips to a boil in plain water, drain, boil again and then proceed with the simple syrup boil. It tones down the pith bitterness but leaves the orange flavor. You are so right about this making great gifts. And to dip in chocolate is simply decadent. Love the stuff.

If you use tangerine, it isn't nearly as bitter as orange rind, much less pith.
