Ingredients
  • 1/2 cup short-grain rice
  • 2 tablespoons oil
  • 2 lb chicken pieces
  • 3 cloves garlic, crushed
  • 3 tablespoons finely chopped lemon grass (white part only)
  • 2 teaspoons grated fresh turmeric or 1 teaspoon ground turmeric
  • 2 tablespoons grated fresh galangal
  • 6 kaffir lime leaves, finely shredded
  • 6 spring onions, chopped
  • 4 cups chicken stock
  • 1 lb pumpkin, cubed
  • 1 small green pawpaw, peeled and chopped
  • 4 oz (green beans are fine) snake beans, cut into short lengths.

Directions
  1. Preheat the oven to moderate 350°F. Spread the rice on a baking tray and roast it for 15 minutes or until golden.
  2. Remove the rice from the oven, allow it to cool slightly and then process it in a food processor until finely ground.
  3. Heat the oil in a large pan; add the chicken pieces in batches and cook for 5 minutes, or until brown.
  4. Drain on paper towels.
  5. Add the garlic, lemon grass, turmeric, galangal, lime leaves and spring onion to the pan; cook over medium heat for 3 minutes or until the spring onion is golden.
  6. Return the chicken to the pan; add the stock, cover and simmer for 20 minutes.
  7. Add the pumpkin and pawpaw, and simmer, covered, for 10 minutes.
  8. Add the beans and simmer, covered for another 10 minutes, or until the chicken is tender.
  9. Stir in the ground rice, bring to the boil, reduce heat and simmer, uncovered, for 5 minutes or until the mixture thickens slightly.
  10. Note: Green pawpaw is available at Asian grocery stores. If it is not available, green mango can be substituted.

What are snake beans?

What a beautiful recipe! Love it!

Yardlong Bean, also called snake bean, or Chinese Long Bean, is a vigorous climbing annual and the plant begins to produce long pods, ranging from 14 to 30 inches, 60 days after sowing. The pods hang in pairs that should be picked for vegetable uses before matured. Yardlong Bean is a subtropical/tropical plant and is widely grown in Southeastern Asia, Thailand and Southern China. It is a very interesting plant to grow - you almost need to check/harvest long beans everyday because they grow very quick in warm climates. It is, however, sensitive to the temperature and grows relatively slow in mild/cold environments. Like to grow common beans, it is recommended to rotate the planting locations every year for getting the best results - do not repeat planting at the same spots within 3-4 years. Edible pods are very crisp, tender and delicious. Long beans are cut into shorter sections and cooked like common green beans. There are many varieties grown in the Orient and they are generally identified by the color of the matured seeds.

Thanks for the explanation. Just out of curiosity, could one substitute a plain old green bean? Are the flavors very different?

Yes a green bean is all it is.

This looks very interesting, I look forward to trying it. = )

Gives me ideas :-) living in a cambodian community maybe this could be used as a welcome to the neighborhood to my recently moved in neighbors
