This chunky guacamole will bring you back to the old country. My housekeeper Anna taught me when I was a kid and since then it has become a Frasco requested dish for every party.

Ingredients
  • 8 ripe haas avacados
  • 2 tomatoes
  • 1 white onion
  • 1-2 jalapenos
  • 2 cloves garlic chopped
  • garlic salt
  • cilantro
  • 1 lime
  • tapatio sauce

Directions
  1. Half the avacados and remove the pit (leave the pit for later, it will prevent the guac from becoming brown)
  2. scoop out the avacados into a large bowl, leave them as whole as can be. THE CHUNKIER THE BETTER. When you mix in the other ingredients they will mash a bit.
  3. Add the following to the avacado
  4. chop tomatoes
  5. chop onions
  6. chop cilantro
  7. chop garlic
  8. Juice 1 jalapeno (or chop very finely) keep the seeds as they will add a nice kick
  9. squeeze in the lime
  10. add salt and pepper
  11. mix together until it is at the desired texture. I prefer chunky.
  12. Add a small amount of tapatio and there you have it! The best Guac ever!!
  13. Serve with Fried flour tortillas or tortilla chips.
  14. NOTE- to prevent browning throw a few pits in the bowl while waiting for guests to arrive.
  15. VARIATION
  16. you can substitute 1 or 2 avacados with pineapple or mango for a spicy/sweet mix

I've made plenty of guacamole in my day and always thought it was pretty good. But I joined this site last week and since I'm an open-minded kind of guy I said to myself, "what the heck, let me give someone else's recipe a try." I'm sad to say your guac kicked my guac's ass. Amazing how a small difference in ingredients can make such a big difference. Basically the only differences in the way I used to do it was that I used regular salt, not garlic salt, and cayenne pepper, not hot sauce. I don't know if it was one of these changes or the combination of both but it came out phenomenal. Thanks.
