Apple Pie Upside Down

- Crust: shopping list
- 2 cups flour shopping list
- 1/2 tsp salt shopping list
- 6 tbsp cold shortening shopping list
- 2 tbsp cold butter shopping list
- 5-8 tbsp orange juice shopping list
- Upside down Part: shopping list
- 4 tsp melted butter shopping list
- 1/2 cup packed brown sugar shopping list
- 1/2 cup chopped pecans shopping list
- Filling: shopping list
- 8-10 cups thinly sliced mixture of Golden Delicous & granny smith apples shopping list
- 1 cup sugar shopping list
- 1/3 cup flour shopping list
- 2 tsp cinnamon shopping list
- 1/2 tsp nutmeg shopping list
- 2 tbsp melted butter shopping list
How to make it
- In bowl, combine flour, & salt; cut in shortening and butter until crumbly.
- Gradually add orange juice tossing with fork till dough forms a ball
- Divide dough into 2 balls.
- Wrap in plastic wrap and refrigerate at least 30 minutes
- Line a 9" DEEP dish pie plate with heavy duty foil, leaving 1-1/2" beyond edge,
- Coat foil with cooking spray
- In bowl combine 4 tbsp melted butter, brown sugar and pecans
- Spoon into prepared pan
- In large bowl, combine the sugar, flour, cinnamon, nutmeg, apples and 2 tbsp melted butter
- Toss gently to mix
- On waxed paper, roll out one ball of dough to fit pie plate
- Place pastry over nut mixture, pressing firmly against mixture and sides of plate; trim to 1" beyond plate edge
- Fill with apple mixture
- Roll out other ball of dough and fit over top of filling
- Fold bottom pastry over top pastry; seal & flute edges
- Cut 4 slits in top pastry
- Bake at 375 for 20 minutes
- Cover edges loosely with foil
- Bake 30 minutes longer or until apples are tender and crust is golden brown
- Cool 15 minutes or longer on wire rack
- Invert onto serving plate and remove foil carefully
- SURE HOPE YOUR PIE is higher than mine, but if not, don't worry it will please everyone
- Serve with vanilla ice cream if wanted

I don't care how high this gets, it sounds like a great recipe anyway. My apple tree is on an off year (no apples). But I'll save this for next year when we'll be giving them to everybody we know. Thanks.
