How to make it

  • Prep time does not include chilling time
  • Place chocolate in a heavy duty sauce pot with 12 Tbs of reserved cherry liquid and melt chocolate over lowest heat until melted in smooth.
  • One can do this in a microsafe bowl, microwaving high power for several minutes, checking to make sure mixture is melting and stirring till smooth.
  • Either way, one must not over cook chocolate or it will sieze and harden.
  • When chocolate is stirred smooth, set aside to cool a bit
  • Beat in yolks one at a time to incorporate well
  • In another large bowel, whip cream to soft peaks and then gently fold into cooled chocolate.
  • Stir in the drained cherries.
  • With clean beaters beat whites till foamy and then increase speed and beat till almost stiff.
  • Gradually add sugar and beat till stiff but not dry.
  • Fold egg whites into chocolate mixture gently until well blended.
  • Place mixture into a l glass punch bowl if you have it, cover with plastic wrap and chill overnight.
  • Then garnish as desired.
  • Yield: 20 or more 1/2 cup servings
  • Note: recipe may be reduced easily for smaller quantities
  • Note: one may substitute a bit of Kirsch or cherry brandy for the cherry liquid if desired
