Comfort Roasted Chicken

- 3-4 chicken breasts on the bone with the skin still on shopping list
- 4 - chicken thighs on the bone with the skin still on shopping list
- - or - shopping list
- package of cut up chicken on the bone shopping list
- 6 medium to large red potatoes or 12 baby red potatoes shopping list
- extra virgin olive oil shopping list
- kosher salt shopping list
- bulb of garlic (yes the whole bulb) shopping list
- oregano or rosemary - either one works great shopping list
- 1 lemon shopping list
How to make it
- preheat oven to 425
- generously coat bottom of large deep baking pan with olive oil
- cut potatoes into 6ths for large, 4ths for medium or leave whole for baby potatoes and place in pan
- drizzle with olive oil (yes, more olive oil!)
- generouly salt and oregano (or rosemary)
- peel garlic bulb and scatter the whole cloves in the pan
- place chicken in the pan, on top of potatoes in fine
- squeeze lemon over entire pan
- drizzle with olive oil (yes, again)
- generously salt and season (again)
- cover with foil and bake for about an hour, then remove cover and cook for about 20 minutes. chicken should be golden brown and potatoes should be fork tender. garlic will be roasted and mushy. There will be a wonderful jus of garlic, seasonings, olive oil and chicken juices.
- I serve this with grilled asparagus and spoon the jus over the entire plate. Also, I usually make some fresh bread when I serve this to sop up the jus. It is a huge hit in my family! When my mom comes over this is her dinner request EVERY TIME!

This dish is absolutely wonderful. Thought I had 2 meals but this piggy(me) couldn't stop eating. don't be afraid of the oi,lemon and seasonings. The more the better. Thanks for a wonderful recipe
