This is a wonderful fall recipe that we love to have for a side dish w/ any meal. It has the perfect amount of sweetness.

I wanted to add that I got this recipe from another site and made some alterations...I never want to take credit for something that's not completely mine. :)

This is a good idea. I usually just use sweet potatoes, but this sounds great too. I'll leave out the sugar though because of my diet.

Leaving out the sugar is fine and I'm sure you could use a brown sugar substitute as well. :)

Loved this! Made tonight and scaled down the recipe since I only had one butternut. I did forgo the sugar and used fat free 1/2 and 1/2. Very creamy and yummy....thanks!

I made this the other night, and found it to be super yummy! I forgot to put the milk in with the butter/brown sugar mixture, so I added it as I was mashing the cooked squash. It is really yummy! Some of my picky family members turned up their noses...I don't think they liked the look of the pepper. Those of us who tried it really liked it, though! The flavor is great...it tastes so much more "butternut-y" than regular boiled squash! Thanks for sharing!
