How to make it

  • Combine all ingredients EXCEPT olive oil.
  • Form patties.
  • Preheat a large, nonstick skillet and fry sausage in extra-virgin olive oil, 3 or 4 minutes on each side over medium to medium- high heat.
  • DO NOT OVERCOOK!
  • Deglaze pan with fresh lemon juice and pour pan-juices over patties, if desired.

    I make my own sausage with a hand grinder ( I highly suggest anyone and everyone to do this)and one recipe for Sicilian sausage I have uses corriander with fennel, s&p and chili flakes. Anyway IMO this was a dynamic recipe because of the addition of corriander. I'm thinking you'd like it because it has lemony overtones.
