I also make this into a sandwich with delicious pepper bacon cooked in another fry pan. Try either the omelet or the sandwich on fresh homemade bread.

Ingredients
- Six eggs
- or
- eggbeaters
- fresh ground pepper
- salt (only if needed)
- bel giorno mozzarella cheese sliced
- oil and butter
- little fresh tomato chunks
Directions
- Prepare and season eggs
- heat pan
- 1 TBLS oil
- 1 TBSP butter
- pour in eggs
- top with sliced cheese tomato and ground pepper
- low to med heat to give cheese a chance to melt
- carefully watch sides and tip up to allow eggs to get underneath
- Cook until they are the way you like them.
- Enjoy with your favorite toasted bread (jelly or jam)
- Or make the sandwich with the bacon. All good!
