Spicy Maryland Crab Soup
From mrjwjohnson 15 years agoIngredients
- 4 cups water shopping list
- 3 chicken parts (neck or wing) shopping list
- 1/2 cup onion ( chopped) shopping list
- 2 stalks celery (chopped) shopping list
- 2 tablespoon hot sauce (I use Texas Pete) shopping list
- 2 tablespoon olive oil shopping list
- ¾ tablespoon Old Bay Seasoning (add more or less to taste) shopping list
- 1/4 teaspoon lemon pepper shopping list
- 1 tablespoon worcestershire sauce shopping list
- 2 cups red potatoes (cubed) shopping list
- 1/2 cup frozen lima beans shopping list
- 1 cup frozen green beans or frozen peas, thawed shopping list
- 8 ounces frozen corn, thawed shopping list
- 28 ounces canned tomatoes with juices shopping list
- 1 bay leaf shopping list
- 1 pound crab meat, fresh or pasteurized, regular or claw shopping list
How to make it
- Place water and chicken in a 6-quart soup pot. Cover and simmer over low heat for at least one hour (as a short cut you could use 1 quart chicken broth and skip this step). Remove chicken parts, add vegetables and seasonings and simmer, covered, over medium-low heat from about 45 minutes, or until vegetables are almost done. Add crab meat, cover and simmer for 15 more minutes, or until hot. (For a milder soup, decrease amount of Old Bay and hot sauce).
