Bangkok Fried Rice Recipe
We love this recipe. Precook the rice and freeze. We use this as our fast food alternative.

Ingredients
  • 1 cup brown rice
  • 1/4 pound lean, ground pork
  • 1 clove garlic, minced
  • 1 egg, lightly beaten
  • 3 green onions, chopped
  • 1 small carrot, shredded
  • 2 tbsp chopped parsley
  • 2 tbsp soy sauce
  • 1/4 pound shrimp, shelled and cooked
  • Salt & pepper to taste

Directions
  1. Cook rice as package directs. Cool.
  2. Heat frying pan, preferably non-stick, over high heat. (I use an electric wok) Add pork & garlic, cook and stir 2 minutes, or until browned. Move pork to side of pan. You might need some oil, depending on how lean your pork is. Add egg to clearing in pan; scramble. Mix in green onions, carrot, parsley, soy sauce, shrimp and rice. Cook and stir for 2-3 minutes or until all is combined and hot.
  3. Remove from heat; mix in chilli oil.
