Beef Stroganoff Casserole Recipe

Prepare this tasty casserole ahead to pop in the oven just before the family gets home. Supper will be ready in no time

Ingredients
- 1 lb ground beef
- 1/4 tsp salt1/4 tsp pepper
- 1 tsp vegetable oil
- 8 oz sliced mushrooms - or 1 can sliced mushrooms - drained
- 1 large onion - chopped
- 3 cloves garlic - minced
- 1/4 cup dry white wine
- 1 can cream of mushroom soup - undiluted
- 1/2 cup sour cream
- 1 Tblspn Dijon mustard
- 4 cups cooked egg noodles
- Chopped fresh parsley - optional
Directions
- Pre-heat oven to 350 degrees
- Grease 9x13 inch baking dish
- Place beef in a large skillet & season with salt & pepper
- Brown beef over med/high heat until no longer pink, stirring to separate beef
- Drain grease from skillet & set beef aside
- Heat oil in the same skillet on med/high.
- Add mushrooms,onion & garlic, cook & stir until onion is tender, about 2 mins
- Add wine. Reduce heat to med/low & simmer 3 mins.
- Remove from heat & stir in soup, sour cream & mustard until well combined
- Return beef to skillet
- Place cooked noodles in prepared baking dish & pour beef mixture over noodles.
- Carefully mix until noodles are well coated
- Bake, uncovered, 30 mins or until heated through
- Sprinkle with parsley if desired
- .
- NOTE:- If prepared ahead & kept in the fridge, add to the baking time until heated through

The ingredients sound great.
I love make-ahead meals! Many times I'll be preping something for the crock pot while I'm cooking something else so I can have tomorrow's meal made ahead of time. It feels like I get a day off!
