African - Elephant - Foot- Bread

- 2- cups of mashed potatoes ( not instant) shopping list
- 10-1/2 cups flour, plus extra for dusting shopping list
- 3- tablespoon salt shopping list
- 1 envelope instant dried yeast shopping list
- 5- cups warm water shopping list
How to make it
- Place potato, flour, salt and dried yeast into a mixing bowl and make a well in the center.
- pour in the warm water and mix to a dough with the dough hooks
- knead the dough until it is smooth and elastic
- shape into a ball and place in a greased bowl............
- loosely cover with greased plastic wrap and leave in a warm , draft -free place until the dough has doubled in size................
- knock the bread back and knead for 2- 3 minutes
- shape the dough into a ball, place on a floured baking sheet and gently flatten the top a little.................
- with a sharp knife, make 2 incisions , close together on one side of the loaf, then continue cutting along the edge to form the elephants toe-nails............
- loosely cover the dough with the greased plastic wrap and leave to rise in a warm place until the loaf has doubled its size.........
- meanwhile , preheat the oven to 400 degrees f.
- bake for approximately 60- 75 minutes, or unitl the loaf sounds hollow when tapped on the bottom..............
- stand the bread on a wire rack to cool.................
- i usually do a egg wash on top when i cook the bread i like the shiny glaze look.but you dont have too................
- mmmmmmmmm cant you just smell it baking nothing like the smell of fresh baked bread ..................
