How to make it

  • Place potato, flour, salt and dried yeast into a mixing bowl and make a well in the center.
  • pour in the warm water and mix to a dough with the dough hooks
  • knead the dough until it is smooth and elastic
  • shape into a ball and place in a greased bowl............
  • loosely cover with greased plastic wrap and leave in a warm , draft -free place until the dough has doubled in size................
  • knock the bread back and knead for 2- 3 minutes
  • shape the dough into a ball, place on a floured baking sheet and gently flatten the top a little.................
  • with a sharp knife, make 2 incisions , close together on one side of the loaf, then continue cutting along the edge to form the elephants toe-nails............
  • loosely cover the dough with the greased plastic wrap and leave to rise in a warm place until the loaf has doubled its size.........
  • meanwhile , preheat the oven to 400 degrees f.
  • bake for approximately 60- 75 minutes, or unitl the loaf sounds hollow when tapped on the bottom..............
  • stand the bread on a wire rack to cool.................
  • i usually do a egg wash on top when i cook the bread i like the shiny glaze look.but you dont have too................
  • mmmmmmmmm cant you just smell it baking nothing like the smell of fresh baked bread ..................
