How to make it

  • Melt the butter in a saucepan.
  • Add mushrooms and green pepper and cook for 5 minutes.
  • Add flour, salt, pepper and blend.
  • Carry on stirring and cooking until smooth and bubblesome.
  • Carefully add milk and chicken broth, stirring all the time.
  • Cook for 10 minutes, stirring constantly.
  • If you prefer your sauce a little thicker, blend 2 tablespoons of cornstarch with about a 1/4 cup cold water.
  • Add to sauce, a tiny amount at a time, until desired thickness is attained. Cook a little more then add the chicken and pimiento; heat thoroughly.
  • Serve on toast , pastry shells or rice.

    I just wanted to say that yours is the first recipe I've tried since joining and I loved it. I substituted the chicken with turkey to use up the left overs and it turned out great.Its just like I remember my mom making.

    My husband is quite a fan of Chicken ala King and Creamed Chipped Beef dishes, so therefore I try most recipes I come across. He like this one very much. I served it on top of my sisters' recipe for her mayo biscuits. I used really good frozen peas.

    Leroux - Frozen or freshly shelled peas go really well with this dish. Roast or broiled potatoes don't go too far wrong either!
