Great  Grandmas Baked Chicken Recipe
This classic recipe has been updated with goat cheese,rosemary and fresh lemon.

  • 8 oz. (about 3/4 cup) soft goat cheese
  • 1tsp. finely chopped fresh rosemary leaves
  • 2tsp grated lemon peel
  • 6 skinless,boneless chicken breast halves(about 2lbs)
  • 2 large eggs
  • 11/2c plain bread crumbs
  • salt and pepper
  • 11/2 sticks(6oz) butter,melted

Directions
  1. Preheat oven to 350. In small bowl,combine goat cheese,rosemary and lemon peel;set aside. Using a small sharp knife,cut into the side of each chicken breast half to create a pocket. Stuff each chicken breast with about 11/2Tbs goat cheese mixture and secure with toothpick.
  2. In a shallow bowl,whisk the eggs and set aside. Place the bread crumbs in another shallow bowl and season with salt and pepper. Add half of the melted butter to the bread crumbs and combine. Keep the remaining butter warm for basting.
  3. Cover baking dish with foil. Dip each stuffed chicken breast in the egg and then bread crumbs to coat;set on the prepared baking sheet.
  4. Bake till cooked through,about 45 mins,drizzling with remaining butter every 15 mins.
  5. Double the goat cheese mixture and spread on baguette slices!
